The Waverley Hotel was taken over by Gemma and Robert Morrison in November 2025. Robbie has been in the hospitality industry for 36 years and a chef in various kitchens, such as The Buchan in Ellon and the Peartree in Fraserburgh. Gemma Morrison has over 20 years in the hospitality trade, mainly at management level, so she knows how to run a hotel professionally with customer service at its centre.
Gemma, Robbie and the team will deliver good quality meals for all customers, whether regulars or new vistors, with a few changes coming in January . On taking over at the Waverley, Robbie and Gemma said: “All our ingredients are fresh and we work with our local suppliers when possible. We hope to see you all over the coming months for whatever you desire, whether it is a lite bite, a freshly cooked meal or maybe a cocktail or two“.
